Has to be our "slop". Came up with this some 20 years ago, mixing hamburger, mac n cheese and peas. To this day, its still my oldest's favorite comfort food.

I make some good chicken quesadillas. Use flour tortillas and on half of them put anything you want in them like chicken, cheese, black olives, tomatoes, green onions, banana peppers, and/or jalepenos. Then fold it over and put in a nonstick pan and grill both sides. I usually fill them inside the pan. Dip them in sour cream or taco sauce.

A "go-to" meal means something that is easy to prepare, or at least to assemble from pre-cooked ingredients, and this idea --– penne pasta with a good ragu --- lends itself to that definition. It can be accompanied with side dishes or salads, or it can be the complete meal.

My "go-to" meal is a recipe I found a long time ago and though I am awful at cooking and following recipes, this one actually turned out awesome! It is called Shipwreck dinner. I know the recipe is simple but you have to remember I simply cannot cook nor get anything to turn out so when this turned out not once but every time I make it, I am proud! It is made with Kraft mac & cheese, stewed tomatoes, frozen peas, hamburger and mozzarella cheese. All in one pan and is so easy and so good.

I usually boil some water and dump that package of macaroni elbows into the pan. Done in minutes! Then rip open that package of pre-washed sugar snap peas, baby carrots, and celery. Arrange them creatively on a plate around the container of veggie dip. Set the cheese and shredder on the table for the pasta. No juice or sweet beverage in the house? I always have a bottle or two of sparkling water and some sort of berry syrup just in case. Mix in the syrup, add the ice, and voila! - a non-alcoholic cocktail to cheer things up. Add some butter to the elbows once you've drained them and serve while hot so the cheese melts. Most importantly, though, make sure the table is set neatly and the food, though minimal, is creatively displayed. Sometimes the meal is more satisfying just because it looks appetizing! Bon Appetit!

May favorite go-to meal is chicken breasts floured and seasoned with salt, pepper and Montreal Steak Seasoning. Fry in oil until brown. Take out and add garlic. Put back in and add a can of beer. Cook until beer is almost absorbed. This is fantastic and takes very little time. Can be served with vegetables and rice or a potato.
