Breakfast. If I can't figure out dinner, we make breakfast.. a little bigger than morning breakfast. Eggs, skillet potatoes, bacon, sausage, pancakes... the works. We always have breakfast items ob hand.

My enchilada ccasserole always seems to be a big hit at all of our gatherings. I used to roll the meat cheese and onions into the corn tortillas and then layer themwith sauce onto 2 or 3 layers but one day i got lazy and just layerd flat corn torts then meat then cheese then onions and repeated this for 4 layers and put the sauce over the top with one more layer of torts and cheese on top My son says it isthe bomb and dosent want mr to make it the old way anymore.

Chicken Alfredo is our go to meal. My kids love it, chicken breast cooked in garlic butter (when chicken is cooked add half a box of thawed and drained spinnach), make a sauce with half and half, parmesian, butter, garlic and salt and pepper. Poor it over the chicken and serve on top of fettecine noodles. MMMMMMMMMM.
