A casserole made from browned & drained ground beef, mixed with green beans and tomato soup and topped off with mashed potatoes. Everyone loves it and always asks for the recipe, and it is so easy to prepare.

So many choices! I love all kinds of food! At a restaurant it's seafood fettucini. But, I'm proud of an economical, quick & easy "one pan" dish. (In agreement with the Bachelor Chow comment) In a large sauce pan, lightly sear your choice of packaged sausage, I prefer the polish large links. Then just simply dump in can(s) of green beans and new potatos, season to taste, simmer a bit, and viola! a meat & veggie dinner! You can include garlic toast or bread and butter if you like.

My mother's Italian beef stew recipe has been passed down the generations. It is one of my childrens' favorites and now my grandchildren love it. Especially on a cold winter night. When we go up north for our winter vacation the day after Christmas, I make it and take it along. Everyone loves it when they come in from the cold, especially with crusty Italian bread.

Morning, noon, or night: pancakes, eggs, and bacon are always a delight. You can dress 'em up with whipped cream on the pancakes, drown 'em in butter and syrup, slather jelly or your favorite jam or preserves on 'em, what ever seems right. 2 or 3 eggs over easy if you please, crispy bacon and a hot cup o'joe. Makes everything right with the world.

I love to make breakfast.....this morning I made a fritatta. I mashed some yukon gold potatoes for the base and mixed in some spices and garlic. Covered the pan, warmed and browned it for about 5 minutes on medium heat. I then browned some ground turkey with lots of spices, soy sauce and mushrooms and put that on top of the potatoes. I whipped up some eggs, spices and milk and put that on top of the first two layers. Covered the pan and cooked it on medium-high until the eggs are set. Then put some cheddar cheese on top of that, cover again for about 5 minutes and voila, super breakfast.

Lightly saute the mushrooms, garlic and proscuitto in extra virgin olive oil. I make EXCELLENT soups, usually chicken-based. Sometimes I make a gumbo with chicken, hot sausage, vegs, and,of course, okra. Sometimes, just plain chicken soup, with carrots, celery, rice or potatoes. The broth has to be very rich and spicy. The cooking aroma alone makes me hungry.....

I have a bbq meatball recipe that is a cinch to make and everyone who has ever tasted it loves it! You take ground beef, cracker crumbs and like a 1/2 to cup of milk depending on how many meatballs you make...and make meatballs-place in cake pan. Then you take basically 1 cup ketchup, 1/4 cup worchestire sauce, 1/2 cup brown sugar and 1/4 cup vinegar (it's to taste in our house and I don't actually even remember what the recipe called for!!!) and bring them to a boil--making the sauce...pour over the meatballs and bake at 350 degrees for about 45 min. to an hour. We usually have mashed potatoes with them and as leftovers-even better!! All of my kids and grandkids learned how to make this on their own at very young ages so they could make it whenever they wanted!

To make macaroni and cheese from scratch boil a 16 ounce package of elbow macaroni until al dente. Turn the oven to 400 degrees. Spray or butter a casserole dish and set it aside. Make a roux out of 3 tbsp each butter and flour. Take about a tbsp of Dijon mustard and mix it into the roux. Add about two cups of nonfat milk. When it has simmered and thickened add grated cheddar cheese and let melt in the sauce Add salt and pepper to taste. Drain the macaroni. Dump the macaroni into the prepared casserole. Then pour the hot sauce over the macaroni and mix it until it covers all of the noodles. Cover the top with finely ground breadcrumbs. Then take more grated cheese and sprinkle on top of the breadcrumbs. Dot the top with dabs of butter and place in the oven for about 25-30 minutes or until the top gets golden brown and the cheese sauce starts bubbling. There is almost never anything leftover. Enjoy.(Don't leave out the mustard, it is the secret.)
